White Bean Soup With Bacon

Ingredients
  

For the Soup

  • 16 ounces dry Great Northern white beans soaked overnight
  • 5 ounces bacon cut into ½-inch-wide pieces
  • 2 cups onion chopped
  • ¾ cup celery chopped
  • ¾ cup carrot peeled and chopped
  • 3 cloves garlic minced
  • 6 cups chicken stock
  • 2 leaves bay leaves
  • 1 tablespoon fresh thyme
  • 2.5 teaspoons kosher salt plus more to taste
  • ¼ teaspoon black pepper plus more to taste
  • 3 tablespoons tomato paste
  • ½ teaspoon paprika

For Serving

  • 1 ounce bacon cooked and crumbled for garnish, optional
  • 2 tablespoons fresh parsley chopped for garnish, optional

Instructions
 

Preparation

  • Drain the beans that have been soaking in water.
  • If you haven't soaked the beans overnight, boil them in a pot of water, let sit for an hour, and then drain.

Cooking

  • Put the bacon into a large Dutch oven on medium-high heat to cook.
  • After a minute, add the onion, celery, and carrot, then lower the heat to low, cover, and cook for 12 to 15 minutes.
  • Add the garlic and cook for another minute.
  • Add the drained beans, stock, bay leaves, thyme, salt, and pepper.
  • Bring to a simmer, then lower the heat and cook partially covered for 1 hour or until beans are very soft.
  • Stir in the tomato paste and paprika, and cook for 5 more minutes.
  • Remove the bay leaves and puree most of the soup using an immersion blender.
  • Season with more salt and pepper to taste.
  • Garnish with crumbled bacon and parsley before serving.

Storage

  • Refrigerate covered soup for up to four days.
  • Freeze cooled soup in a freezer-safe bag or container for up to three months.

Notes

If using canned beans, use three to four (15-ounce) cans and cook them for only 15 minutes in Step 3.
