Preheat oven to 350°F. Lightly grease a 13” x 9” baking dish with cooking spray.
Slice the onions into ¼" thick rounds and separate into individual rings.
Restack onion rings in the baking dish.
Mix parsley, mustard, garlic powder, seasoned salt, oregano, kosher salt, cayenne, and black pepper in a small bowl.
Toss mozzarella, cheddar, and Parmesan in a medium bowl.
Sprinkle onions with seasonings, toss to coat, and dot with butter. Add broth to the pan and cover tightly with foil.
Bake until tender, about 75 to 90 minutes.
Remove from oven and sprinkle with cheese mixture, then bake until cheese is melted and bubbling for 5 to 7 minutes.
Broil until cheese is browned in spots, about 1 to 2 minutes. Top with parsley.
