  • 1.5 lbs steak (sirloin or ribeye), cut into cubes Sirloin is lean and economical; ribeye gives more marbling and richness.
  • Salt Essential for seasoning the meat.
  • Freshly cracked black pepper Amplifies the peppercorn sauce.

Cooking Ingredients

  • 1 tablespoon olive oil For high-heat searing.
  • 2 tablespoon unsalted butter Adds rich flavor while cooking.
  • 1 tablespoon butter To finish the sauce and add gloss.
  • 2 cloves garlic, minced Adds aromatic flavor.
  • 1 teaspoon crushed black pepper Creates the signature peppery bite.
  • 0.5 cup heavy cream Gives the sauce a velvety texture.

Preparation

  • Season the steak cubes with salt and freshly cracked black pepper.
  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the steak cubes and sear them until browned on all sides, about 3-4 minutes. Remove from the skillet and set aside.

Making the Sauce

  • In the same skillet, melt the butter over medium heat.
  • Add minced garlic and crushed black pepper, and sauté until fragrant, about 1 minute.
  • Pour in the heavy cream and stir until thickened, about 2-3 minutes.
  • Return steak to the skillet and toss to coat in the creamy sauce.
  • Serve immediately and enjoy your Steak Bites!

Notes

If your skillet is overcrowded, the steak will steam instead of sear; work in batches for the best crust. For a sharper flavor, a squeeze of lemon at the end can brighten the sauce.
