Ingredients
  

Chicken Preparation

  • 2 pounds boneless skinless chicken thighs
  • ¼ cup cornstarch
  • ¼ teaspoon salt
  • ½ teaspoon ground black pepper

Sauce Mixture

  • ¼ cup low sodium soy sauce
  • ¼ cup water
  • ¼ cup brown sugar lightly packed
  • 4 cloves garlic minced

Jalapenos

  • 2 large jalapenos cut into ¼ inch slices

Frying Oil

  • 4 inches vegetable oil for frying

Preparation Steps

  • Place the prepared chicken into a bowl with salt and ground black pepper. Toss to coat well.
  • Add the cornstarch and toss until all of the chicken is well coated. Set aside.
  • In a separate bowl, mix soy sauce, water, brown sugar, and garlic. Whisk well and set aside.
  • Slice jalapenos. Remove seeds for milder taste or leave them in for more heat. Set aside.

Cooking Steps

  • Heat vegetable oil in a heavy bottomed pot to 315 degrees F.
  • Lower chicken into oil one piece at a time, frying in batches of four or five for 5-6 minutes, turning halfway.
  • Increase oil temperature to 350 degrees and add all fried chicken back for a second fry of 3-4 minutes.
  • Remove chicken and drain well.
  • In a large skillet over medium-high heat, add the sauce mixture and bring to a boil.
  • Add fried chicken and sliced jalapenos, tossing well into the sauce until thickened.
  • Transfer to a plate and garnish.

Notes

Adjust the jalapeno amount to customize spiciness level.
