Ingredients
  

Chicken

  • 3 pounds bone-in chicken thighs extra fat trimmed
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • olive oil for searing

Vegetables

  • 1 medium yellow onion diced
  • 6 cloves garlic minced
  • 4 medium carrots peeled and sliced
  • 3 medium red potatoes quartered or baby red potatoes

Flavorings

  • 1.5 tablespoons tomato paste
  • 2 teaspoons fresh thyme leaves or ¾ teaspoon dried
  • 0.5 teaspoon fresh rosemary minced or ¼ teaspoon dried
  • 3 bay leaves dried or fresh

Liquids

  • 5 cups chicken broth divided plus more as needed
  • cup all-purpose flour

Finishing Touches

  • 1 cup frozen peas
  • ¼ cup finely chopped Italian parsley

Instructions
 

Cooking Instructions

  • Season chicken with salt and pepper. Sear chicken in olive oil in a skillet until golden brown, then transfer to slow cooker.
  • In the same skillet, sauté onions and carrots for 5 minutes. Add garlic, thyme, and rosemary, and sauté for 1-2 minutes more. Stir in tomato paste and deglaze with chicken broth. Transfer to slow cooker.
  • Add potatoes and bay leaves to the slow cooker, season with more salt and pepper, and pour in broth. Cover and cook on HIGH for 4 hours.
  • 3.5 hours in, mix flour with chicken broth to make a slurry. Add to slow cooker with peas. Cook remaining 30 minutes.
  • Shred chicken, return it to the pot, and stir in parsley. Adjust seasoning if needed.
  • Serve warm with bread or biscuits.

Notes

For best results, use bone-in chicken thighs for flavor. Store leftovers in an airtight container for up to 3 days.
