Ingredients
  

Marinade

  • 1 tablespoon Sesame Oil or vegetable oil
  • 2 teaspoons Fresh Ginger grated for flavor enhancement
  • 2 cloves Garlic minced for optimal taste
  • cup Low-Sodium Soy Sauce or Tamari, tamari is gluten-free
  • 1 tablespoon Rice Vinegar can substitute with apple cider vinegar
  • ¼ cup Brown Sugar light or dark brown sugar
  • ¼ cup Ketchup consider low-sugar option
  • ½ teaspoon Smoked Paprika swap with regular paprika if needed
  • 1 tablespoon Cornstarch or arrowroot powder

Chicken

  • 2 pounds Boneless, Skinless Chicken Thighs chicken breasts can be substituted

For Grilling

  • Vegetable Oil for greasing the grill

Instructions
 

Making Huli Huli Chicken

  • Make the Marinade: Heat sesame oil in a pan over medium heat. Sauté ginger and garlic for 1-2 minutes, then mix in soy sauce, rice vinegar, brown sugar, ketchup, and smoked paprika. Combine cornstarch with cold water to create a slurry, add it to the sauce, and simmer for 5 minutes until thickened.
  • Marinate the Chicken: Set aside a portion of the sauce for basting. In a large bowl, combine the remaining marinade with chicken thighs. Coat the chicken well and refrigerate for at least 1 hour, up to 4 hours for deeper flavor.
  • Grill the Chicken: Preheat grill to medium-high and brush grates with vegetable oil. Remove chicken from marinade, grill for 4-6 minutes on each side, basting with reserved marinade until internal temperature reaches 165°F.
  • Serve: Transfer chicken to a platter and serve with your favorite sides such as steamed rice or grilled vegetables.

Notes

Garnish with chopped green onions or sesame seeds for added flavor and presentation.
