  • 2 tablespoons avocado oil or other high-heat oil
  • 1 tablespoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne pepper adjust for heat
  • ½ teaspoon black pepper
  • ½ teaspoon salt

  • Mix paprika, oregano, thyme, garlic powder, onion powder, cayenne pepper, black pepper, and salt in a small bowl to create the seasoning blend.
  • Pat the salmon fillets dry with paper towels. This helps create a better crust.
  • Generously coat all sides of each salmon fillet with the homemade seasoning blend, pressing the spices onto the fish.
  • Heat the avocado oil in a large, heavy-bottomed skillet (cast iron works best) over medium-high heat until the oil shimmers.
  • Carefully place the seasoned salmon fillets into the hot skillet. Do not overcrowd the pan; cook in batches if necessary.
  • Sear the salmon for 3 to 4 minutes without moving it until a dark crust forms.
  • Gently flip the fillets and cook for another 3 to 5 minutes, depending on the thickness, until the salmon is cooked through and flakes easily with a fork.
  • Remove the salmon from the skillet and serve immediately.

Notes

For a less spicy version, reduce or omit the cayenne pepper in the seasoning mix. If you prefer oven baking, place seasoned fillets on a baking sheet coated with oil and bake at 400°F (200°C) for 12 to 15 minutes. Serve this salmon with a squeeze of fresh lemon juice or a simple dill sauce.
