Ingredients
  

  • 2 slices sourdough bread
  • 2 tablespoons pesto
  • 1 ounce soft mozzarella cheese sliced
  • 1 tablespoon butter

Instructions
 

  • Spread ½ tablespoon of butter on one side of bread and place it facedown in a skillet.
  • Spread a tablespoon pesto on the top side of the bread evenly to the edges.
  • Place the cheese slices on top of the pesto.
  • Spread the remaining pesto on one side of the remaining piece of bread. Place on top of the cheese, pesto side down, to form a sandwich. Spread remaining ½ tablespoon butter on top of the sandwich.
  • Heat a skillet over medium heat.
  • Cook for 2-3 minutes, or until the bottom is golden brown and crispy.
  • Using a spatula, carefully flip the sandwich to the other side and cook for an additional 2-3 minutes, or until the cheese is melted and the bread is golden brown and crispy.
