Ingredients
  

  • 4 small onions peeled and sliced to ¼ inch thickness
  • 8 ounces shredded Parmesan Cheese you can use 6-7 ounces
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • cooking oil spray
  • Tzatziki Optional dips: Ranch, or ketchup

Instructions
 

  • Preheat the oven to 400F and line a sheet pan with Parchment paper.
  • Using a Mandolin slicer, slice the 4 small onions thin (¼ inch thickness).
  • Spread the 8 ounces shredded Parmesan Cheese over the prepared sheet pan.
  • Carefully line the sliced onions over the Parmesan cheese.
  • Spray with cooking oil spray and season with the 1 teaspoon smoked paprika, 1 teaspoon onion powder, and 1 teaspoon garlic powder.
  • Bake for 18-20 minutes or until the cheese turns golden brown.
  • Allow it to cool for 10 minutes so the cheese hardens up.
  • Cut them into squares and serve with your favorite dip like Tzatziki.

Notes

Small to medium sized onions work best. Be careful not to burn the cheese. Oven temperatures vary, so start checking it at 16 minutes. Slice onions thin or else they will come out soggy. If you don’t have cooking oil spray, dab the onions with a bit of olive oil or avocado oil with a brush. Only onion and parmesan cheese are technically needed; the seasonings just add flavor.
