Mediterranean Quesadilla

These Mediterranean quesadillas are a healthy twist on a classic, filled with salty feta, creamy mozzarella, and plenty of veggies.

Equipment

  • large non-stick skillet

Ingredients
  

  • 1 teaspoon olive oil
  • 2 tablespoons chopped fresh tomatoes
  • 2 tablespoons diced red onion
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 cup baby spinach
  • ¼ cup crumbled feta cheese
  • 3 oz mozzarella
  • 2 large tortillas

Instructions
 

  • Add the olive oil to a large non-stick skillet and heat over medium heat.
  • Add the tomatoes, onion, and bell pepper and cook for 3-4 minutes, stirring occasionally.
  • Add the spinach and garlic and continue to cook for 2 minutes until the spinach is wilted.
  • Remove the veggies from the pan.
  • Add half of the veggie mixture onto one half of a tortilla.
  • Top with half the feta and half the mozzarella then fold the tortilla in half.
  • Repeat with the remaining tortilla and ingredients.
  • Cook the quesadillas in the skillet over medium heat for 3-4 minutes on each side until golden brown.
