Ingredients
  

For the Chicken

  • 2 lbs boneless, skinless chicken thighs
  • 3 tablespoons olive oil
  • 1 whole lemon (juice)
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Creamy Feta Tzatziki

  • 1 cup Greek yogurt
  • ½ cup finely grated cucumber squeezed dry
  • 2 tablespoons crumbled feta cheese
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, finely grated
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh dill

For Serving

Instructions
 

Marinate the Chicken

  • In a large bowl, combine olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and black pepper. Add the chicken thighs and toss well to coat. Cover and refrigerate for at least 1 hour, preferably overnight to deepen the flavor.

Make the Creamy Feta Tzatziki

  • While the chicken is marinating, prepare the tzatziki. Mix the yogurt, grated cucumber, crumbled feta, olive oil, lemon juice, garlic, and dill in a bowl. Season with salt and pepper. Chill in the fridge for at least 30 minutes.

Cook the Chicken

  • Preheat your grill or a heavy skillet over medium-high heat. Cook the marinated chicken thighs for 5–6 minutes per side until deeply golden and cooked through. Let them rest for 5 minutes, then slice into strips.

Assemble the Gyros

  • Warm your pitas or flatbreads until soft and pliable. To assemble, spread a generous spoonful of the creamy feta tzatziki over each bread, add sliced chicken, fresh tomatoes, red onions, lettuce, and an extra sprinkle of feta if desired. Wrap it up, take a bite, and let your taste buds travel.

Notes

This recipe can easily be made gluten-free by swapping in gluten-free pitas. For a lower-carb version, serve the chicken and toppings in lettuce cups or over salad greens.
