Ingredients
  

Coconut-Lime Crust

  • 1 cup shredded unsweetened coconut
  • ½ teaspoon lime zest
  • ½ tablespoon lime juice
  • 2 tablespoon unsalted butter melted
  • 1 tablespoon maple syrup

Mango Mousse

  • ¼ cup hot water
  • 1 packet unflavored gelatin powder or 1 tablespoon
  • 1 pound mango chunks fresh or thawed frozen
  • tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • cup whipping cream cold

Instructions
 

Make the Coconut-Lime Crust

  • Toast the shredded coconut in a dry skillet over medium-high heat until golden and fragrant (about 3–4 minutes). Transfer to a plate to cool.
  • Zest and juice the lime.
  • Pulse the cooled coconut in a food processor until coarse. Add lime zest, lime juice, melted butter, and maple syrup. Pulse to combine.
  • Divide the mixture into 5 dessert glasses or ramekins, press down gently, and chill while preparing the mousse.

Prepare the Mango Mousse

  • Bloom the gelatin by stirring it into hot water until fully dissolved. Set aside to cool.
  • Puree the mango chunks in a food processor until smooth, then strain through a fine mesh sieve. Stir in syrup, vanilla, and dissolved gelatin.
  • In a cold mixing bowl, whip the cream until stiff peaks form.
  • Gently fold half of the mango mixture into the whipped cream, and repeat with the remaining half.

Assemble and Chill

  • Spoon or pipe the mango mousse over the cooled coconut crust. Smooth the tops if needed.
  • Refrigerate for at least 3 hours, or overnight for the best texture.

Serve

  • Top each mango mousse cup with a swirl of whipped cream, fresh mango slices, or toasted coconut, then serve chilled.

Notes

For best results, strain the mango puree for a silky texture. You can skip the gelatin if consuming the same day but it may not hold as well the next day.
