Honey Garlic Roasted Carrots

Honey Garlic Roasted Carrots are delicious, tender and tossed in a sweet honey garlic butter sauce.

Ingredients
  

  • 2 pounds carrots cut into 3 inch pieces
  • 8 tablespoons butter
  • 2-3 tablespoons honey
  • 4 cloves garlic minced
  • ½ teaspoon salt more to taste
  • ¼ teaspoon fresh ground pepper
  • Fresh parsley

Instructions
 

  • Preheat oven to 425 degrees.
  • In a oven safe skillet melt butter. Add in honey and garlic and whisk until combined.
  • Add in carrots and toss to coat, sprinkle salt and pepper on top.
  • Bake in the oven for 20-25 minutes or until carrots are fork-tender.
  • Sprinkle with chopped parsley.

Notes

Try and keep your carrots the same size for even cooking. If you don't have an oven-safe skillet, melt butter and saute garlic in a skillet. Place carrots in a baking dish pour garlic butter and honey over the carrots and toss. Bake as directed. Store leftover cooked carrots in an airtight container for 2-3 days in the refrigerator.
