Grilled Za’atar Tofu Skewers

Tofu and Marinade
- 14 oz extra-firm tofu drained and pressed
- 3 teaspoon za’atar divided
- 4 tablespoon extra-virgin olive oil divided
- 1 ¼ teaspoon kosher salt divided
Salad
- 1 cup cherry tomatoes halved
- 2 small Persian cucumbers thinly sliced
- ½ cup pitted mixed olives halved
- ½ cup red onion thinly sliced
- 1 tablespoon fresh lemon juice
- 2 tablespoon capers drained
- ¼ teaspoon kosher salt for seasoning the salad
- ¾ cup hummus
- chopped fresh flat-leaf parsley for garnish (optional)
- pita bread for serving
Preparation
Cut the pressed tofu into bite-sized cubes.
In a bowl, whisk together 2 tablespoons of olive oil, 2 teaspoons of za’atar, and 1 teaspoon of salt.
Toss the tofu cubes gently in the marinade and let them sit for at least 30 minutes.
In a large mixing bowl, combine the halved cherry tomatoes, cucumber slices, olives, and red onions.
Drizzle in 2 tablespoons of olive oil, the lemon juice, remaining za’atar (1 teaspoon), and the capers. Toss gently.
Preheat the grill to medium-high heat.
Thread the marinated tofu onto skewers.
Place skewers on the grill and cook for about 10-15 minutes, turning occasionally until golden and slightly charred.
Serve the skewers alongside the refreshing salad and a generous scoop of creamy hummus.
Garnish with chopped parsley and serve with pita bread.
