  • 2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt

Instructions
 

Preparation

  • Preheat oven to 350°F. Lightly coat a 13- x 9-inch pan with cooking spray.
  • Bake pecans in a single layer in a shallow pan for 5 to 7 minutes or until lightly toasted and fragrant, stirring halfway through.
  • Mix butter, sugar, eggs, and vanilla extract in a large bowl until blended. Add flour, salt, cinnamon, and baking soda and stir until blended. Stir in apples and 1 cup pecans. Spread thick batter into prepared pan.
  • Bake on the bottom rack in the oven for 45 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on a wire rack for at least 30-45 minutes.
  • Spread frosting over cooled cake and sprinkle with remaining pecans.

Notes

To prevent browning, bake on a lower rack or tent with foil if needed. Can be made as cupcakes or in smaller layers with adjusted baking time.
