Cooking Instructions

  • Heat the olive oil: Warm 2 tablespoons of olive oil in a skillet over medium heat until shimmering to prepare for cooking the onions and chicken.
  • Caramelize the onions: Add the thinly sliced onions to the skillet and cook, stirring occasionally, until they become deeply golden and caramelized, which should take about 15 minutes.
  • Season the chicken: While the onions cook, season the sliced chicken breast with salt and pepper evenly to enhance its flavor.
  • Cook the chicken: Add the seasoned chicken to the skillet with the onions and cook until the chicken pieces are browned and cooked through, approximately 5 to 7 minutes.
  • Add broth and thyme: Pour in 2 cups of beef broth and sprinkle 1 teaspoon of thyme over the mixture. Reduce heat and let it simmer gently for 10 minutes to allow flavors to meld and the chicken to become tender.
  • Assemble the bowls: Spoon the chicken and onion mixture over 2 cups of cooked rice, creating individual serving bowls.
  • Top with Gruyère cheese: Sprinkle 1 cup of shredded Gruyère cheese over the top of each bowl. Optionally, you can allow the cheese to melt slightly with residual heat before serving.

Notes

Caramelizing onions slowly over medium heat is crucial to developing the dish’s deep, sweet flavor. Using beef broth instead of chicken broth intensifies the French onion style flavor. Gruyère cheese adds a nutty, creamy topping that complements the savory chicken and onions perfectly. For extra richness, you can briefly broil the bowls after adding cheese to melt and brown it slightly. Serve these bowls with a crisp green salad for a balanced meal.
