  • ½ lb fresh chorizo
  • 10 oz can diced tomatoes with green chiles such as Rotel
  • 8 oz pkg. cream cheese cubed
  • 8 oz processed cheese such as Velveeta, cubed
  • Chopped fresh tomatoes
  • Chopped fresh cilantro
  • Tortilla chips, corn chips, or pretzels for serving

Preparation Steps

  • Heat a 10-inch cast iron skillet over medium-high. Add chorizo and cook, stirring often to crumble chorizo, until browned and cooked through, 5 to 6 minutes. Tilt skillet to drain drippings to one side; spoon off and discard drippings.
  • Stir in diced tomatoes with green chiles, cream cheese, and processed cheese and cook over medium, stirring constantly, until melted and heated through, 4 to 5 minutes.
  • Top with chopped fresh tomatoes and cilantro. Serve warm with tortilla chips, corn chips, or pretzels.
