Salad
- 1 head iceberg lettuce rinsed and finely chopped
- ¼ lb italian salami julienned
- 1 cup shredded mozzarella cheese
- 1 15.5-ounce can garbanzo beans rinsed and well-drained
Dressing
- ½ cup extra-virgin olive oil
- ¼ cup red wine vinegar
- 2 teaspoon dijon mustard
- ½ teaspoon salt and pepper to taste
- ¼ cup grated pecorino romano or parmesan plus more for serving
Preparation
In a large serving bowl, combine oil, vinegar, mustard, salt and pepper to taste; whisk until well blended.
To the bowl, combine lettuces, salami, mozzarella, and garbanzo beans. Toss with vinaigrette to coat well.
Finish with more pecorino and salt and black pepper if desired.
