Filling

  • 1 ½ cups chopped rhubarb use fresh or well-thawed frozen
  • ¾ cup granulated sugar
  • 2 tablespoons cornstarch

Crust and Topping

  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • ½ cup brown sugar
  • ½ cup unsalted butter softened
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ teaspoon baking soda

Preparation

  • Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  • Mix chopped rhubarb, sugar, and cornstarch and let sit.
  • Combine flour, oats, brown sugar, salt, and baking soda.
  • Add butter and vanilla, mix until crumbly.
  • Press two-thirds into pan to form base.
  • Spread rhubarb mixture evenly.
  • Sprinkle remaining crumble on top.
  • Bake for 40–45 minutes until golden.
  • Cool completely and slice.

Notes

Use fresh rhubarb for best results or thaw and drain frozen rhubarb well. Allow bars to cool fully before slicing for clean cuts. Add cinnamon or nutmeg for extra flavor depth.
