Ingredients
  

  • 4 pieces chicken breasts
  • 1 packet ranch seasoning mix
  • 2 tablespoon Taco Seasoning
  • 1 can (15 oz) black beans drained and rinsed
  • 1 can (8 oz) Rotel
  • 1 can (15 oz) corn not drained
  • 1 block cream cheese
  • 2 pieces fresh limes

Instructions
 

  • Add the chicken and place all the ingredients except the limes and the cream cheese in the crock pot.
  • Cover and cook on high in the slow cooker for 3-4 hours or low for 6-8 hours.
  • Shred the chicken.
  • Squeeze the limes over the chicken mixture, add cream cheese and stir to combine.
  • Continue to heat in the crock pot until the cream cheese is fully melted (usually 30-60 minutes).
  • Serve over rice or with tortillas. Enjoy!

Notes

You can add green chilis or bell peppers. Refrigerate leftovers in an airtight container for up to 5-7 days. A Fiesta Ranch Seasoning Packet can be used instead of the Ranch Mix and Taco Seasoning if available.
