Crispy Baked Sweet Potato Fries

Ingredients
  

  • 2 pounds sweet potatoes (about 2 medium-large or 3 medium)
  • 1 tablespoon cornstarch
  • 0.5 teaspoon fine sea salt
  • 2 tablespoons extra-virgin olive oil
  • optional spices: freshly ground black pepper, cayenne pepper and/or garlic powder

Instructions
 

  • Preheat the oven to 425°F with racks in the lower and upper thirds of the oven. Line two large, rimmed baking sheets with parchment paper.
  • Peel the sweet potatoes and cut them into fry-shaped pieces about ¼" wide and ¼" thick. Transfer half to one baking sheet, and the other half to the other.
  • Sprinkle the fries with cornstarch and salt. Toss until lightly coated. Drizzle with olive oil and toss until evenly coated.
  • Arrange fries in a single layer and bake for 20 minutes, then flip them to cook all sides.
  • Swap pans and bake for 10 to 18 more minutes, or until crispy. Keep an eye on them to prevent burning.
  • If desired, toss fries with seasonings to taste. Serve warm.

Notes

These fries are best served fresh but can be stored in the fridge for up to 4 days. Reheat in an oven to retain crispness. You can also prepare the sweet potatoes up to 2 days in advance.
