Chicken

  • 2 breasts boneless, skinless chicken about 1.3 lb. total
  • teaspoon salt
  • teaspoon pepper

Cooking Ingredients

  • 2 tablespoon olive oil divided
  • 2 cloves garlic minced
  • 1 pint grape tomatoes sliced in half
  • ½ cup heavy cream
  • ¼ cup pesto

Cooking Steps

  • Fillet the chicken breasts into two thinner pieces. Season the chicken with a pinch of salt and pepper on both sides.
  • Heat a large skillet over medium heat. Add 1 tablespoon oil and swirl to coat. Add the chicken and cook until golden brown and cooked through (about 7-10 minutes total). Remove to a clean plate.
  • Turn the heat down to medium-low. Add the remaining olive oil, minced garlic, and halved grape tomatoes. Sauté for about five minutes until the tomatoes soften.
  • Add the heavy cream and pesto to the skillet with the tomatoes and stir. Allow the sauce to come to a simmer and adjust the salt or pepper if needed.
  • Add the chicken back to the skillet with the tomatoes and sauce, turning to coat. Simmer for a few minutes to heat through. Serve hot.

Notes

You can use any type of pesto; basil or red pesto works well. Look for affordable pesto brands like Alessi or Barilla.
