Ingredients

  • 1 mango, peeled and diced
  • 0.5 cup mandarin orange segments, drained

  • Beat in the egg and vanilla extract into the creamed mixture until fully combined.

  • Beat together the softened cream cheese and butter until smooth and creamy.
  • Gradually add the powdered sugar, one cup at a time, until fully incorporated and smooth.
  • Beat in vanilla extract and 2-3 tablespoons of milk or heavy cream until the frosting is smooth and spreadable.
  • Spread the cream cheese frosting evenly over the cooled sugar cookie crust.
  • Artistically place the sliced strawberries, blueberries, raspberries, kiwi slices, diced mango, and mandarin orange segments over the frosting.
  • Melt the apricot jam or apple jelly in a small saucepan over low heat and brush it gently over the arranged fruit.
  • Chill the prepared fruit pizza in the refrigerator for at least 30 minutes.
  • Slice into wedges and serve chilled.

Notes

Chilling the dough is important to prevent shrinkage during baking and to make rolling easier. Ensure the cookie crust is completely cooled before frosting to avoid melting the cream cheese layer.
