Ingredients
  

Cooking Oil and Chicken

  • 2 tablespoons refined coconut oil or olive oil divided
  • 4 pieces skinless, boneless chicken breasts (1 ½ to 2 pounds)
  • 1 ¾ teaspoons kosher salt divided, plus more to taste

Vegetables

  • 2 large shallots peeled and sliced
  • 12 ounces fresh green beans trimmed
  • 3 cloves garlic minced
  • 1 ½ teaspoons fresh ginger grated or finely minced

Liquids and Flavorings

  • ¾ cup low-sodium chicken broth
  • 1 can coconut cream (13.5-ounce, shaken well)
  • 1 heaping teaspoon freshly grated lime zest (from about 2 limes)
  • 1 tablespoon fresh lime juice (from 1 to 2 limes), plus more to taste

Garnish and Serving

  • Fresh cilantro for garnish, optional
  • Lime wedges for serving, optional
  • Toasted coconut for serving, optional
  • Freshly steamed rice for serving, optional

Cooking Instructions

  • Heat 1 ½ tablespoons of oil in a large deep skillet over medium-high heat. Season the chicken on both sides with 1 teaspoon of kosher salt. Cook the chicken on one side until golden brown (4 to 6 minutes), flip and cook the other side (about 4 minutes). Transfer to a plate and cover with foil.
  • Add remaining ½ tablespoon of oil to the pan, followed by shallots and ¾ teaspoon of salt. Sauté until translucent (1 to 2 minutes). Add green beans and garlic, toss until fragrant (about 1 minute), then add ginger and broth. Scrape the bottom of the pan to release any stuck bits.
  • Add coconut cream to the pan and stir to combine. Place chicken back in the pan, nestling among the green beans. Bring to a simmer and cook, turning chicken occasionally and stirring the sauce until chicken registers 165°F (7 to 10 minutes).
  • Turn off the heat, add lime zest and lime juice, and stir. Taste, adding more juice and/or salt as needed. Top with fresh cilantro and serve with coconut and lime wedges on the side, along with rice.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days.
