Ingredients
  

For the crust

  • 1.75 cups graham cracker crumbs They give that nostalgic flavor.
  • 0.5 cups unsalted butter, melted Because butter makes everything better.
  • 0.25 cups sugar

For the filling

  • 16 oz cream cheese, softened The heart and soul of any cheesecake.
  • 1 cups granulated sugar For that sweet, sweet balance.
  • 1 teaspoon vanilla extract A splash goes a long way.
  • 3 large eggs Which make it all bind beautifully.
  • 1 cups sour cream For that extra creaminess that brings it all together.

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a bowl, combine graham cracker crumbs, melted butter, and sugar until it resembles wet sand.
  • Press the mixture into the bottom of a springform pan, using the bottom of a measuring cup to pack it down tightly.
  • With a hand mixer, whip softened cream cheese until smooth and fluffy.
  • Gradually mix in the granulated sugar and the vanilla extract.
  • Add eggs one at a time, mixing just enough to combine to avoid cracks in the top.
  • Mix in sour cream until well combined.
  • Pour the filling onto the crust, smoothing it out with a spatula.

Baking

  • Bake for about 50-60 minutes, until the edges are set but the center is slightly jiggly.
  • Let the cheesecake cool slowly in the oven with the door ajar for about an hour.
  • Transfer to the counter and then chill in the refrigerator for at least four hours or overnight.

Notes

For variations, consider adding fruit toppings like fresh blueberries or strawberries, or make a chocolate version by substituting one cup of cream cheese for melted dark chocolate. Serve with whipped cream and lemon zest for a delightful finish.
