Ingredients
  

Cookies

  • 1 cup unsalted butter softened
  • 1 cup light brown sugar packed
  • ½ cup granulated sugar
  • 2 large eggs room temperature preferred
  • 2 teaspoons pure vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • 3 cups old-fashioned oats
  • 1 cup grated/shredded carrots
  • ¾ cup chopped walnuts or pecans
  • ½-1 cup raisins optional depending on preference

Frosting

  • ¾ cup salted butter softened
  • 12 oz cream cheese softened
  • 4 ½ cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 Tablespoon corn starch to help maintain frosting shape

Instructions
 

Preparation

  • Preheat oven to 350F (175C).
  • In a large mixing bowl, combine butter and sugars and use an electric mixer to beat until creamy, light, and fluffy (about 1-2 minutes).
  • Add eggs and vanilla extract and stir well. Pause to scrape down the sides and bottom of the bowl.
  • In a separate bowl, combine flour, baking soda, nutmeg, and salt.
  • Gradually add dry ingredients to wet, pausing to scrape down sides.
  • Stir in oats until combined.
  • Add carrots and walnuts/pecans and raisins, if using.
  • Drop cookies by 2-Tablespoon-sized scoops onto cookie sheet, spacing at least 2 inches apart.
  • Bake for 11-12 minutes. Allow cookies to cool completely before decorating with icing.

Frosting Preparation

  • Combine butter and cream cheese in a mixing bowl and beat until smooth.
  • Gradually add powdered sugar, scraping down sides as needed.
  • Stir in vanilla extract.
  • Add corn starch and stir.
  • Spread frosting onto cookies or pipe using a fitted piping bag.

Notes

Store frosted cookies in an airtight container at room temperature for up to 24 hours or in the refrigerator for up to 5 days. Allow to sit at room temperature for 15-20 minutes before serving if desired.
