Ingredients
  

  • 8 ounces cottage cheese
  • ½ cup quick cooking oats
  • 2 large eggs
  • ¼ cup pure maple syrup
  • ½ teaspoon ground cinnamon
  • pinch kosher salt
  • 1 pint blueberries
  • nonstick cooking spray

Instructions
 

  • Put the cottage cheese, oats, eggs, syrup, cinnamon, and salt in a bowl. Stir until combined. Gently fold in the blueberries.
  • Spray a regular size 12-count muffin tin with nonstick spray. Spoon the batter into the muffin tin.
  • Bake in a 350-degree oven for 18 to 21 minutes. Let cool for several minutes and serve warm.

Notes

These are delicate, I had the best luck removing them gently with a metal kitchen spoon.
