Vegetables

  • 4 cups potatoes peeled and diced
  • 2 tablespoons butter
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup carrots diced
  • ½ cup celery chopped

Base

  • ¼ cup all-purpose flour
  • 4 cups chicken or vegetable broth
  • 1 cup milk or heavy cream

Seasonings & Toppings

  • 1 ½ cups cheddar cheese shredded
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup green onions sliced
  • 2 tablespoons fresh parsley chopped
  • ½ cup cooked bacon crumbled (optional)

Preparation

  • Peel and dice the potatoes, then chop all vegetables and mince the garlic.
  • In a large pot, melt butter over medium heat and sauté onion, carrots, and celery until softened.
  • Add garlic and cook for about 1 minute until fragrant.
  • Sprinkle flour over the vegetables and stir continuously for 1–2 minutes.
  • Slowly pour in the broth while stirring to avoid lumps, then bring to a simmer.
  • Add potatoes and cook for 15–20 minutes until tender.
  • Lightly mash some of the potatoes to create a creamy texture.
  • Stir in milk or cream and gradually add shredded cheese until melted.
  • Season with salt and pepper, adjusting to taste.
  • Simmer for a few more minutes, then serve hot with desired garnishes.

Notes

Use freshly shredded cheese for smoother melting and better texture. Mash only part of the potatoes to keep a balance between creamy and chunky. Add extra broth or milk when reheating to restore the creamy consistency.
