Ingredients
  

For the Rice

  • 1 cup Rice white, brown, or jasmine

For the Stir Fry

  • 1 tablespoon Oil vegetable, canola, or olive oil
  • 1 medium Yellow Onion or red onion or shallots
  • 2 cups Bell Peppers mixed colors
  • 1 medium Zucchini or broccoli or snap peas
  • 2 cloves Garlic minced

For the Sauce

  • ¼ cup Soy Sauce low-sodium recommended
  • 2 tablespoons Brown Sugar or honey or coconut sugar
  • 2 tablespoons Rice Vinegar or apple cider vinegar
  • ½ teaspoon Red Pepper Flakes adjust to taste

Instructions
 

Cooking Instructions

  • Cook the rice according to package instructions. Optionally, brown the rice in butter for flavor.
  • Chop the onion, bell peppers, and zucchini into bite-sized pieces.
  • In a large skillet, heat oil and sauté chopped onions until soft and translucent, about 3-4 minutes.
  • Add bell peppers and zucchini to the skillet; stir for 5-10 minutes until tender. Add garlic last minute.
  • Push veggies to one side; add ground beef, breaking it up. Cook until browned, about 5-7 minutes.
  • Drain excess grease if needed. Stir in soy sauce, brown sugar, rice vinegar, and red pepper flakes. Simmer for a few minutes.
  • Serve the mixture over the cooked rice, garnishing with soy sauce, sesame seeds, or green onions if desired.

Notes

Want to add crunch? Garnish with sesame seeds for an extra touch. For meal prep, chop veggies and sauce ahead of time.
