Ingredients
  

  • 1.5 lbs Cod Fillets (about 4 thick fillets)
  • 2 tablespoon Olive Oil or Coconut Oil
  • Salt & Freshly Ground Black Pepper
  • 4 cloves Garlic minced
  • 1 can (13.5 oz) Full-Fat Coconut Milk
  • 1 large Lemon (for both zest and juice)
  • Fresh Parsley a big handful, chopped

Steps

  • Preheat oven to 400°F (200°C). Pat cod fillets dry and season with salt and pepper.
  • Heat oil in skillet over medium-high heat, add fish, and sear without touching for 2-3 minutes.
  • Flip fish, reduce heat to medium, add garlic, and cook for a minute. Pour in coconut milk and lemon zest.
  • Turn off burner, spoon sauce over fish, and bake in the oven for 10-15 minutes.
  • Remove from oven, squeeze lemon juice over fish and garnish with parsley.

Notes

For fish substitutions, use halibut or haddock. Ensure to use full-fat coconut milk for creaminess. Patting fish dry ensures a golden crust.
