Ingredients
  

  • 272 g flour wheat flour
  • 400 g sugar powdered sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 4 pieces eggs
  • 8 pieces carrots grated, medium size
  • 225 g sunflower oil

Glaçage

  • 226 g Philadelphia cheese
  • 1 teaspoon vanilla extract
  • 453 g powdered sugar
  • 115 g softened butter unsalted

Instructions
 

Preparation

  • Mix the flour, sugar, baking soda, salt, and cinnamon.
  • In a separate large bowl, beat the eggs until frothy.
  • Slowly integrate the oil into the eggs while mixing.
  • Gradually add the flour mixture to the oil and eggs mixture.
  • Mix well until fully integrated.
  • Add the grated carrots and mix thoroughly.
  • Pour into a greased container. You can make one or two layers for stacking.
  • Bake in a preheated fan oven at 175 degrees for 30-35 minutes.

Glaçage

  • Beat all frosting ingredients until creamy.
  • Wait for the cakes to cool and spread the frosting on top.
  • Stack the cakes if applicable and enjoy!

Notes

For texture, some may add crushed nuts. You can choose to grate the carrots normally or blend them for a smoother mixture. It’s essential that the cake is cool before frosting to prevent melting.
